Many of us have been lamenting about the weather in these past weeks and looks like the heat spell is still going on for another month or so.

To beat the heat, we have been visiting the pool at the Club for the past 2 weekends after having stayed away from the pool for some time already. Thinking of putting the boys back in a swim class soon.

The heat has also brought about heaty cough and sore throat to many people, not to mention Dengue mosquito as well. My boys and I have not been spared from the cough and sore throat for the past week. What I have prepared was a soothing sweetened soup for the throat that also helps to get rid of those sickening phlegm that seems so hard to dislodge. It is also easy to prepare. The ingredients are basically apricot seeds (nan xing & bei xing), 'ji bing' and 'chuan bei' plus a chinese pear. Put everything into a container and double-boiled it for about 2 hours. A very nice, fragrant and sweet cooling remedy for the throat indeed. But don't expect miracles, you probably need to drink this concoction for at least over 3 consecutive days. These ingredients are easily obtained from any Chinese Medical Shop and they can also advise on how much do you need each time. For me, I just make an estimation myself.

(the Chuan Bei is not shown in the photo, usually I will get the shop to grind them into powder before I buy them)

Using the apricot seeds, you can also prepare another cooling Chinese dessert (or 'Tong Shui' as the Cantonese call it). The ingredients are apricot seeds, papaya, white fungus and rock sugar. The white fungus need to be pre-soaked for about 10 to 15 minutes. Boil the apricot seeds and papaya first for about 45 minutes before adding white fungus. Try not to cook the white fungus for over an hour as they will thicken the soup. After adding the white fungus and rock sugar, cook for about another 45 minutes and you are done. By the way, this one is supposed to be good for complexion as well because of the papaya.

School Holidays

We are already into the 3rd week of school holidays and we (or rather I) had been terribly busy over the past 2 weeks. On top of my work, we were trying to squeeze in actvities for the kids.

The first event we attended to kick-start the holidays was the NAVY OPEN HOUSE. The boys enjoyed getting free ride on the amphibian vehicle (Navy's version of the DUCK TOUR) and a 45 minutes sea cruise on the Missile Corvette. It was also an eye-opening experience to visit the new Frigate where the cabins resembled those of a cruise ship and the Bridge was just huge. The only complain of course was the heat under the sweltering hot sun especially at the piers area where it is concrete all around. All in all, the boys had lots of fun.

Next on our 'must-visit' place (according to Marcus) is Sentosa. Woke up early to catch the Straits Times, (not to catch the latest news) flipped through the Classified Ads quickly and zoomed into D15-16 Apartments for Rent column. My well-trained eyes scanned through the list zealously and alas! I found the apartment that I was helping these groups of tenants to find. Thank GOD! It really saved my day but the tension was not over until I secured it. At 7am, it was too early to call anyone so I just sms the necessary contacts. Then went about my routine trying to keep a cool head.

In my heart, I was truly praying hard "God help me to close this deal". It is not so much the money at stake but the reputation and integrity. As I was preparing myself to get ready to face the world, my boys started bickering and Marvin was crying and running to me every 5 minutes when he could not get what he want from his brother. It was getting on my nerves as the clock ticked away and calls started coming in. It was tough to talk and shut out the 'background noise' from my boys. Plus I 'kenna' scolding from my co-broke agent when I made a proposal to her at my tenants' request.

Finally my MIL came to babysit and I was at last free to go. First I had to go to Marcus' kindergarten to hear what the teachers have to say about him before picking the tenants up from their office and then head down to view this new released apartment that I spotted this morning. I made sure we were the first one to view.

However while I was driving my clients down to view the apartment, another chaotic episode happened at home. My MIL could not find the housekeys to unlock the door and I received phone call from the school van asking whether Marvin was going to school. No choice got to tell the van to go ahead without him.

We were the first to view and it was really a nice apartment so negotiation started. We had to wait for an hour plus so in between I quickly went back home to find the other bunch of keys which were hidden under the sofa. Took the opportunity to drive Marvin to school and hang around waiting for a positive reply from the owner. Whew! It was a "YES" and the deal was sealed. That really made my day and the rest is just history and life goes on.

"Roomba" The Domestic Helper

Saw it at the HOME FIX DIY shop - Robotic Vacuum Cleaner which retails for $450. Very tempted to buy one because it can just move around your house on its own and even return to the charging unit when its' power is depleted. Very interesting and saves a lot of time.

Imagine just switch it on everyday to run around your house and you can still carry on with your other task. I think it will be a great help and relieve me of some time to do other stuff. Plus the house will be quite dust free if you turn it on daily. I think it is worth the investment.

Will get one when we move to our new house. Maybe by then they will come up with one that has better function or at a lower price! I have always admired working mummies who can stay on top of everything despite having a full-time job and balancing the roles of a mother and a wife as well. I salute all these mummies.

Now I think being able to be a full-time mummy can be a real blessing. Yes I was one for the past 5 years until I started doing part-time work since last year. When I was one, I was a bit disillusioned at times about my worth and for not being able to do things for myself instead of the family. For the past week, I have been busy shuffling between depositing my boys at either mum's or mil's place and going out to view apartments with some tenants. I must say I feel tough balancing the demands of having to keep a clean house and trying my best to secure good deals quickly for my clients. (It didn't feel good to come home and see piles of dirty laundry waiting and clean clothes waiting to be ironed!)

The real estate market place is full of people waiting to undercut and poach your clients right under your nose. You do not really know who are your friends and who are your foes. You just have to tread very carefully. I guess when it comes to fighting for survival (since agents rely solely on commissions and do not have basic income), you see many ugly sides of the human beings. For me, it was an eye-opener and very frustrating at times to have to deal with such ugliness in human's behaviour. Despite all these, I really enjoy going to different apartments and studying the market trend for different condos. When I view an apartment, I can always see something that tells me about the occupant or the owner and I find that extremely interesting. From there, I also picked up home decorating tips

The past weeks have been not so fruitful and fruitful. With the tight rental market currently, it is really a big challenge serving tenants. But I am learning and growing from these experiences and they put me back in the right perspective about the outside world again. They also provide a chance for me to look towards my innerself and re-evaluate my own values and ethics. Hopefully these values will be passed on to my own sons so that when they face with adversity, these values will help them to stay on course.

Busy Mummy hangs up the apron

This cooking-diva is feeling a bit guilty for not having really cooked for the family for the past week. Looking at the coming week schedule, looks like it is a non-cooking week again. In the blink of an eye, the school holidays are just round the corner.

Thanks to Musa's suggestions on what to do for the June Holidays, at least I have something to fall back on to entertain the two boys. This time round, due to my schedule, I haven't been able to plan anything yet. Maybe should just play by ear! But I think I should let Marcus attend some chinese learning camp so that he would be more prepared for Primary One next year! (Talk about Kiasu Mummy!)

If you have read today's Straits Times special on "How to Choose a Primary School", I am really amazed at the extent that parents do to really know the school like trying out the canteen food and the school bus etc etc.... I shouldn't be laughing. We are just lucky that our alma mater is quite a popular school and that we can enroll our son without much stress and hassle. Cannot imagine if my alma mater is just a neighbourhood school or a non-existent school, how far would I go to get my son a place in a popular school?

Happy Mother's Day

My darlings gave me the mothers' presents that they made in school today. However at their age, it was impossible for them to hide their presents from me. Marcus came home on Friday and told me not to look into his school bag as it contained a Mothers' Day flowers that he made for me. He even described what he used to make the flowers to me in great details. Then he added that I should not know what he is going to give me! HOW IRONICAL! He wanted to keep the suspense but couldn't help divulging the teeny tiny details to me. Ha Ha.... that's why he is so adorable (at times!)

The photos above showed what my boys did for me.

The first photo shows a yellow holder which had a chinese Tang Shi (Tang Dynasty Poem) written on the inside. Marcus had painstakingly copied it word by word as instructed by his Chinese teacher. I am so proud of him for completing the verse in such neat handwriting. (Usually he will complain about how tough it is for him to write in Chinese!)

On the other photo, it shows the stalks of flowers made from straws and paper in the yellow holder as well as a mothers' day greeting written on a paper plate with some colour paper pasted around it. The latter was made by Marvin. Marvin's school also bought carnation flowers for them to take back home. But the flowers have somehow wilted by today! Anyway, I love my boys and I know they love their mummy dearly.

For these 2 days, we went out for Mothers' Day dinner. On Saturday, we went to Marina Square's Centre Stage to eat at the Chinese restaurant that serve Dim Sum on conveyor's belt with my mother-in-law and sister-in-law. This evening, we went to Peach Garden at OCBC centre for dinner with my parents and sister and brother-in-law. The Peking Duck was good as well as the roast pork. I would also give the spicy fried string beans a thumbs up. All in all, we had quite a feast over this weekend!

Happy Birthday

Today is Musa's and Miss Mo's birthday. However I thought it would be better if I get her permission before posting her on the blog.

My Shi Fu, Buddy and Big Sister (all roll into one), alias EK is a great, great cook who would not stop at anything to cook up a storm to satisfy her family's craving. She is truly the 'Domestic Goddess' who is always keen to try out new recipes. You should see her collection of recipes! EK and I met in Canberra and ever since the day our families get to know each other, her house became our daily hideout where we pig out. Those were really wonderful times and very very memorable indeed. Without her, we would not be able to savour local delights like nonya kueh, curry, rendang, mee siam, prawn noodles etc while being far, far away at down under.

Watching her cook and helping her really inspired me to broaden my cooking horizon by trying out new dishes and new ways of cooking which I never thought I could do. It was at her house that we did Pandan Cake, Pineapple Tarts, Kueh Salat and many more. I truly admire her patience and dedication (she is also a mother of 2 boys like myself). Back then, she would go to the extent of making her chilli sauce from the basic ingredients by grinding and pounding the chilli, onions, garlic etc in huge quantity and then freezed them. For me, I would try to get my hand on ready made sauce. I still remember doing the Penang Laksa with her. Every ingredient that went into the pot was fresh and cut and chopped up by us. The satisfaction from tasting the food from our hard work was just so good and fantastic.

So I am paying tribute to a great friend and sister on this blog. Without her, I would not have acquired those cooking skills. This would also serve as a "walk down memory lane" kind of nostalgic record for myself. Those days will never happen again because now that we are all back in Singapore, our work lives have also become much more hectic that we do not have time to do all those things that we used to do. But I will treasure the good memories and the friendship built up over that few months we spent together. Here's a toast to our friendship!

Back to Nature

On Saturday, we decided to take the kids to Pulau Ubin for them to have some kampung experience. The Changi Ferry Terminal has taken on a new look though the bumboats and the operators still look the same if not more weather-beaten. Gosh, the last time I stepped on Ubin was in JC time, which is like 17 years ago!

The boys enjoyed the ferry ride tremendously. They find it quite a thrill. We were there around 8 plus and the crowd has not really packed in. Just next to the jetty on Ubin, there is a small coffeeshop operated by an old Malay couple who sell Nasi Lemak, Mee Robus and Mee Siam.

We had our breakfast of Nasi Lemak and Mee Robus there. The Nasi Lemak was really sedap! The grain is firm and tasty with the right tanginess. The fried chicken wing was done very traditionally and was marinated with some spices like tumeric. (I must go and find out what do the Malays use to marinate their chicken wings to give off that delightful flavour.) There is also the sambal chilli, Ikan Billis and sunny side up to go with the Nasi Lemak.

However, the uncle put too much condensed milk into the hot drinks whether it is the coffee or the milo. I think 1/4 of the drink is condensed milk! Yuks, I can't bring myself to finish the drink at all.

After breakfast, we rented 2 mountain bikes with child seats attached and cycled around the island. This place has got the cheapest rental bicycles as it cost only $6 to rent a bike for the whole day. We rented on hourly basis and paid $4 for each bicycle for 2 hours. There was this uphill stretch that was really tedious that I ended up pushing the bike and it was on this stretch that I was bitten by mosquitoes all over my uncovered bodies even though I already slapped on mozzies repellent! I could really see the mosquitoes hovering around me and I was the 'meal' that they have been waiting for!!!

We decided to head back to the jetty point and we still had one more hour to kill so we cycled towards the western part of the island and saw this small patch of garden with a sign that says "The Secret Garden". There was a well, a scarecrow and different plots for vegetables and fruits. Marcus was specially excited when he discovered the well. In the garden, there were papaya, yam, chilli, curry leaves and many others. Very educational for my boys indeed.

As we cycled halfway along the inter-tidal zones on dirt tracks, we decided to turn back to the jetty as the tracks were really muddy. By then, it was really hot and sunny and the place was a lot more crowded than when we arrived. We returned the bikes and headed to one of the few provision shops left on the island and had a coconut drink. Hmm...simply heaven. The owner of the shop told us that his grandfather first settled down in Ubin long, long time ago and leased the shop from the government to operate his provision business. Now the family has all relocated back to mainland Singapore while he prefers the kampung life there and so continues to operate the business.

As we head back to Singapore, my boys asked us to take them to Ubin again soon. And you bet we will as it is a very relaxing way to spend a Saturday morning.

The 51st way to pick MEE up

Guess everyone who has a copy of yesterday's Sunday Times would not miss the big headline "50 WAYS TO PICK MEE UP" on LifeStyle frontpage. Today I did my 51st way of cooking your handy instant noodles. Here is my version :

For the main ingredients, I used green leafy vegetables (eg. Xiao Bai Chai, Chai Xin), mini pork belly (airpork from NTUC) and mushrooms (button, straw or shitake or a mixture), shredded chicken and onions.

The mini pork belly have to be marinated with light and dark soya sauce and some pepper. For the chicken, just marinate with some sesame oil and light soya sauce. Heat the wok with some oil and fry the mini pork belly till the oil oozes out (yes, sinful but delicious!) Then remove the pork and keep the oil in the wok to fry the onions and the other ingredients. Add some stock or water and flavoured with some vinegar, light soya sauce, chinese cooking wine and sugar (to neutralize the sourness of the vinegar). Finally just throw in the pork belly and the instant noodles into the pot. Let the noodles soak up the sauce and simmer for a while and the dish is done!

One advantage of this method is that you can pre-cooked the sauce first and when you want to eat, you reheat the sauce again and throw in the noodles to simmer for a few minutes. This is another quick dish for busy people especially noodles lovers!

My Son's Favourite Dish II

These are my two mischievous yet adorable boys. It is also a very simple dish to prepare, one of those quick dish that I mentioned in my previous blog.

For this dish, I like to use Chicken Thigh Meat as it is more tender and juicy. The ingredients are very simple : mainly wolfberries, 'Yu Zhu', 'Dang Shen' and red dates to spice up the sauce. Firstly, marinate the thigh meat with light soya sauce and Chinese Cooking Wine. Then boil some water in a pot (just enough to cover the meat). Throw in everything (Chinese Herbs, Chicken and marinating sauce) when the water boils and then cover the pot and simmer over low heat for about an hour or until the meat is tender. You will have a dish that is both tasty as well as health enhancing. My hubby and sons find the sauce very appetising when it goes with steam rice.

Sometimes I have leftover sauce which I just add water and use it as a soup base for noodles. Though cooking is like a hobby to me, I don't cook up a storm everyday as there are other important matters to attend to like reading to your children, spending time with them on top of trying to finish the pile of housework that is screaming for your attention. Hence, knowing how to shorten or simplify the cooking process on a daily basis is important as there is no point spending hours in the kitchen and then neglecting the other parts of your life.

Therefore I will sometimes prepare a quick dish like this one which I named it Minced Meat Tofu. Basically, the minced meat (can be pork or chicken) is marinated with light soya sauce, pepper and sesame seed oil first. Then heat the frying pan with a little bit of oil and stir fry the meat to bring out the fragrance. (If you like, you can add some chopped garlic or shallots too) Pour in the black sauce that consists of Dark Soya Sauce, Black Vinegar and sugar with some water. Cook with the meat till the sauce boils over and thicken slightly. Then pour it over the whole block of Tofu. Steam the Tofu. To even simplify thing, I put the Tofu in my rice cooker to steam as I cook my rice at the same time. The advantage of doing this is that you can continue to keep the Tofu warm by keeping it in the rice cooker till you want to eat it. Before serving, just garnish with some Chinese Parsley and cut chilli if you wish. Viola! In 5 minutes you already have one nutritious and delicious dish to go along with rice.

Don't underestimate this simple dish, you can have variety by changing the source according to your tastebud. If you like spicy, then change the sauce to Sze Chuan Hot and Sour Sauce or Sambal Chilli Sauce or even Small Shrimp Chilli Paste (Hei Bee Hiam, in dialect)!

Food Courts with a View

Today's Blog is not about my cooking experience but would like to specially mention 2 particular food courts that boast a very good view. (It was after reading Miss Mo's experience at Central that prompt me to write this.)

Recently I happened to pop by Central to see what type of shops it has. Went to the Food Court on the top floor which is called something like "My Dining Room.... by Kopitiam". The food stalls found there are a letdown since they are the usual fare you find in any Kopitiam food court. However, it boasts a scenic view of the Singapore River and Clarke Quay which is really nice. It is quite nice to just sit by the window and have a simple Kopitiam coffee or dessert like Ice Kachang and watch the river bumboats going up and down the river ferrying tourists. Hmm... maybe one of these days I should take my boys for a ferry ride down the river. They will definitely be thrilled!

Next is the Marina Square's food court that overlook Marina Bay. If you dine al fresco at this Food Court, you can see the esplanade and the bay area. Marina Square's food court is one of the better food court with some very good stalls especially Samy Fish Head Curry and the Hong Kong Roast Meat Stall. We usually frequent these 2 stalls when we dine there.

Shortcut to Pastry Making

There are lots of ready-made stuff in the supermarket that can really help 1st time cook to get started. One of them is frozen pastry sheets. I was thrilled when I first discovered them in Woolsworth Supermarket in Australia. With a little bit of imagination and creativity, you can create a wide variety of pastries that you fancy.

Basically, there are Filo, Puff and Short Crust pastry sheets. I tried using the Filo pastry sheets to make apple strudel but did not succeed as I was not good at handling the Filo pastry sheets which actually consist of many layers of thin pastry sheets. For the Puff pastry sheets, I used them to make egg tarts and mini curry puffs and they were simply delicious. They can also be used as the pasty topping for the soup bowl. As for the Short Crust pastry, you can use them to make many different types of pies or tarts.

For the egg tarts filling, I searched the website : www.allrecipes.com for the recipe. I used to surf this site a lot as it offers many different versions of the same food and the recipes are posted by people from all over the world. A very interesting site and a reference site for the uninitiated.

The curry puff filling was by trial and error. I just cut up some potatoes into very fine cubes and marinate them with curry powder. Then I fried them with some chopped onions and added some salt for flavour. Lastly, cut out the pastry sheets into some circles and wrapped up the filling by placing them in the middle of the circle and fold up in half. Use the fork to press down the edge to create some patterns or use your finger to twist the edge. Just need to bake them and you get to savour freshly made, piping hot curry puffs. Unfortunately, the photo does not do justice to the actual products! The pastry sheets can also be used to wrap around the sausage to make sausage roll as seen in the photo!

Oh yes, there are also ready-made Vol-au-Vent shells in the supermarket and you can just filled them up with any kind of fillings. By the way, just sidetrack a bit, Bakerzin served very good mushrooms Vol-au-Vent!

However, it is a pity that these pastry sheets are not readily available in Singapore, at least not in NTUC. You can find them in some Cold Storage Store but they do not come cheap.

My Inspiration

Watching celebrity cook on TV can be truly inspiring. During the year spent in Canberra, I enjoyed watching cooking programmes and find them extremely entertaining and educational.

Jamie Oliver, The Naked Chef - He made cooking seem so effortless and fun. He loves using lots of fresh herbs to spice up the dishes and sometimes the more exotic ingredients that are not found in this part of the world. I remembered watching one episode when he used different exotic mushrooms and just watching him describing and preparing them already tickle your different senses.

Kelly Kwong - The Australia-born Chinese is such a joy to watch. Her programmes really sizzled with flavour. I loved hearing the sound of sizzling wok with hot oil on her programmes. It sounded very much like the sound of my mum cooking in the kitchen. She is also one who is very generous with natural ingredients like shallots, onions, ginger, chilli, garlic etc. The camera always focus on these brightly coloured raw ingredients and they are so delightful to look at. Her Chinese roots are very much reflected in her cooking styles as she does a lot of stir-fry.

Nigella, The Kitchen Goddess - Everything about her is so immaculate from her hairdo, makeup, down to her kitchen and the utensils she used. Cooking is a form of art as well as seduction when you watch her programme. She makes me realise that just because you are a housewife who tolls in the kitchen, there is no excuse that you can neglect your look. But then again, how do you expect to keep up with perfect manicure if you are chopping, cutting and washing away in the kitchen daily??? Her programme is truly relaxing as you watch her enjoying every moment in the kitchen and finally savouring her products. What can you day? She is the GODDESS!

Cooking is about chemistry - on how you mix and blend different flavour and then smell them coming together to create the type of aroma that will leave such an impression. I think all of us have childhood memories that comprise of certain taste or smell that is so unforgettable and remind us of past events. I hope that one day, when my boys are all grown up, they will remember the smell of their mummy's cooking.

The first step to becoming a Cooking Diva

It all started in 2003. In Canberra, far away from the food paradise, Singapore, I was forced by circumstances to experiment with cooking. Prior to that, my cooking never ventured away from the usual fare like Fried Rice, Spaghetti and Instant noodles.

Being away from the familar food scene, we craved for Singapore food like never before. Hence, we would often make trips down to Asian Provision Store to stock up on cooking ingredients and checking out almost all the Asian restaurants that serve anything close to what we missed dearly.

Here's a photo of a typical home cook dinner with carrot soup, fried egg, black sauce fish and spinach.

Asian Delights

This is the Singapore Laksa which we found out can be cooked fairly easy with the PRIMA LAKSA Pack. Of course the pack was not available in Canberra then, our fellow Singaporean friends have to buy from Singapore and brought them over. However we did try the Asian Gourmet Laksa Pack which tasted quite good but not quite the "Katong Laksa" type.

The attempts at making sushi turned out to be quite successful as well. I would not say they measure up to the "pro" but they were decent looking and taste great.

My favourite was making avocado and tuna sushi. I still keep my sushi mat with me though I haven't used it since we came back to Singapore.

Look at the great looking plate of homemade Char Siew

It's funny that I find Australian Pork repelling because of the strong pork stench. Hence a great way to mask that smell was to make Char Siew! Another successful attempt which we were quite proud of!

Western Delights

At times, I did western dinner as well.

On the left, it's Chicken Schnitzel with Potato Wedges and Salad. On the right, it's Roast Chicken with Baked Broccolli.

The Italian Job

Then of course my favourite has to be Italian food. I managed to whip out my fave dessert of all time, TIRAMISU. There were also Penne Carbonara and the usual Spaghetti as seen below :

FUSION

There were times we do fusion all in one meal. The photo below shows oyster mornay, spinach fritata and butter chicken.
